Food safety systems that have been applied until recently were to make legal definitions of unsafe foodstuffs, to identify and remove foodstuffs that do not comply with this definition and to implement the measures imposed by legal regulations. However, such conventional practices did not fully meet the preventive and protective measures. In today's conditions, these traditional systems have failed to show the necessary effectiveness and ultimately food safety has not been achieved as desired.

In recent years, more scientific risk analyzes based on foodborne diseases and their causes have been started. This trend forms the basis of the preventive and preventive approach, that is, the proactive approach, which should be applied to food safety both locally and globally.

Based on risk analyzes, this approach is the most appropriate and effective method for controlling food-borne risks. At the same time, this approach necessitates the application of the necessary control systems in the foodstuff production chain.

FSSC 22000 Food Safety Management System is designed with this approach. Thanks to this system some countries have taken the opportunity to evaluate food safety issues in line with their own interests and to make legal arrangements.

FSSC 22000 Food Safety Management System certificate companies must first apply ISO 22000 and PAS 220 standards. PAS 220 standard TSE ISO / TS 22002-1 prerequisite programs in food safety - Food production standard has been published in our country.

Then the FSSC 22000 standard needs to be understood and applied.

At this stage, it is necessary to implement the system for a period of time and to perform possible corrective and preventive actions by conducting internal audits and to eliminate nonconformities. After this point, a certificate can now be applied to a certification body to request a certificate.

At this stage, first and second stage audits will be carried out by the certification body. If there are any nonconformities identified during these inspections, they should be corrected immediately.

 

If the certification body is convinced that the enterprise should obtain a certificate based on the auditor's reports, the FSSC 22000 Food Safety Management System shall issue a certificate and submit it to the enterprise. The validity period of this certificate is three years as in other quality management systems and the company should be observed with the interim audits to be performed every year.
